THE SHORT VERSION
Fish sauce in a cocktail? Absolutely.
On a work trip to San Diego, my homie and I made a detour to Kingfisher. No reservations, so we showed up just before opening and grabbed seats at the bar. Good move: within about twenty minutes, even on a Wednesday, the place was packed.
It’s a beautiful, Michelin-recognized spot, with warm service behind the bar and a welcome lei. Getting lei’d on arrival? A pretty good start.
I’d read about the fish-sauce cocktail, so that bright green sour had to come first. I honestly wasn’t sure how it would work. Then I took a sip. Beautiful savory depth, all folded into an incredible sour. They nailed it. I’ve been trying to recreate it ever since—watch the recipe section for my take.
The Sesame Soiree, with sesame oil-washed gin and ginger, hit another familiar note. It reminded me of my own La Luna: different drinks, but a shared affection for what sesame can bring to a cocktail.
The food was delicious, too, but the drinks are what I’m here to talk about. Great bartenders, a room full of energy, and cocktails that lived up to everything I’d hoped for. Fancy, thoughtful, and absolutely worth the stop.
Go for dinner, but give the cocktails your full attention. Arriving before opening worked for us when we didn’t have a reservation.
