Funky Lavender Daiquiri

Description

Beautiful, funky, and fresh: bright lime and soft lavender meet lively rum character in a daiquiri that is floral, fragrant, and full of personality.

Ingredients

  • 1 oz
  • 1.5 oz Lime Juice
  • 2 oz

Lavender Simple Syrup

A floral simple syrup with cane sugar, lavender, lemon peel, and a pinch of salt. Taste as it steeps so the lavender stays fragrant rather than perfumey.

Ingredients

  • 1 cup cane sugar
  • 1 cup water
  • 2 tablespoons dried lavender
  • Some lemon peels
  • 1 pinch of salt

Directions

Bring the water to a boil. Once boiling, add the cane sugar, dried lavender, lemon peels, and pinch of salt, then turn off the heat.

Stir to dissolve the sugar and let the mixture steep. Stir and taste every few minutes until the flavor is right, usually 5–10 minutes.

Do not over-steep: too much lavender extraction can give the syrup an unpleasant perfume taste. As soon as the flavor is right, strain out the lavender and lemon peels, then let the syrup cool.

Funky Rum

Funky rum brings an expressive mix of grassy, earthy, savory, or ripe-fruit aromas to a cocktail. Different rums get there in different ways.

Agricole-style rum is made from fermented fresh sugarcane juice rather than molasses. It often has a vivid grassy, herbal, or earthy character that can taste funkier than a lighter rum. The cane supplies the fresh, vegetal character; fermentation and distillation shape the rest. Agricole does not automatically mean high-ester or intensely funky.

Variations & alternatives

Paranubes is my rum of choice for this drink. It is a Mexican cane-juice rum from Oaxaca, rather than a Martinique rhum agricole. Its open-air fermentation with native yeast blends fresh juice with an ongoing ferment, creating a distinctive, complex cane spirit.

Another expressive rhum agricole is a good alternative. For a Jamaican take, try Hampden Estate rum: its fermentation and distillation develop the fruity esters behind its ripe banana and pineapple character. That is a different kind of funk from agricole’s grassy cane notes.

Shake the mixing ingredients with ice in a cocktail shaker.

Additional steps & variations

Strain into a coupe, or a stemmed cocktail glass with sides that curve inward near the rim. The inward-curving shape can help bring the lavender and rum aromas toward your nose.
